Coconut Oil and Carrots Were Made for Each Other

I don't generally slather anything but my feet with coconut oil1, except when I decide to roast the hell out of some carrots. Today I got out the zataar, lightly-processed coconut oil, and the two pounds of carrots that were at the bottom of the bag. I barely trimmed them even though they were ugly bottom-of-the bag carrots (almost bendy). I threw them in the oven on 275 Fahrenheit, in a cast iron Dutch Oven. Four hours later, these roots are going to be the best thing on your dinner plate. Like, save them for last type food. They're like the new mashed potato, know what I mean.

1Coconut oil is a very good skin sanitizer. It will prevent foot odour, it could even turn your foot odour around, if you know what I mean… uh huh? If it’s paired with something like oil of oregano and/or tea tree oil, you can even get aggressive with a foot fungus. You can also get a pretty good hand sanitization out of coconut oil, although if you’re going to rub oil of oregano on your hands and feet, don’t touch your eyes for a while. Haha. I mean it. Wash your hands with soap, thoroughly, afterward. Maybe just use tea tree oil.
